Your assessment is correct, the category IUs do not find their way into the profile. You can try to install a category IU but this may cause all the categorized entries to be installed. This would happen if the requirements from the category to the categorized element was "greedy". You can try changing the category requirements to be non greedy but I'm not sure if this would address the issue.
Finally even if the categories are installed in the profile, they will most likely not show up in the p2 UI.
