Personally i think there are a lot of things to do to improve DHT. After
all, DHT is a general architecture, finding useful applications for it
is a total different question.

Most file-sharing networks like Gnutella are unstructured. If i am
correct, FreeNet is one type of structured P2P (but it's not
DHT).Distributed DNS is another good example, but i don't know any
specific implementation.

One recent application of DHT is in providing trackerless functionality
for Bittorrent protocol (version 4.1 support  Bammboo  DHT implementation).
