I'm not sure I understand what you want but an EBS backed AMI refers
snapshot so those are created when the AMI is created. Also when you launch
the instance use to create the new AMI you can override any volume with
launch_block_device_mappings.

But if you don't want to do any provisioning you might be better off using
the cli directly.
