if you setup all the VLAN IPs on eth0 (eth0.x,...) then you dont need the 2 
other NICs.
we used them for example with Snort. We sent a copy of the internet traffic on 
eth1 so that Snort can see it.
The third NIC is sometimes used to send a copy of the DHCP traffic to PF when 
Snort is used.

It all depends on your setup.
