I've already removed all the other SMS providers than my own.
My question is about how to avoid that the user HAVE to choose
a provider. It is tedious, and totally unnecessary when there is
only one choice?
Could you be more specific about how to do that?

Configuration > Source > SMS

Click on the cross when you highlight a provider.

You can add your own SMS gateway into the html form.
