Hello Xavier,
what you can try is to capture the smtp traffic and see if you can see
the email.
Something like tshark -i eth0 -f "port 25" should help.
On the other side, return "bob" there :

you will need to check in the mail log of you server to understand
what happen.
If you don't have any error in PacketFence PKI then the problem is
elsewhere.
