I don't know how your restore mechanism works, but if you replace an app during
hotsync, it deletes it and then installs a new copy. When the app is deleted,
the category is lost. Unfortunately, there isn't an easy way around this. 3rd
party launchers may not have this problem because they have to keep an extra
list of applications and what categories they're filed into.
