I recommend choosing colors with different hues. This should make them look
different than one another when viewed off-angle. It also allows you to make
them have approximately the same lightness, so a single text color will look
good on them all. For these kinds of uses of color, I don't think you have
to worry too much. For photographic image viewing, you'll probably want to
tweak the colors for the particular display hardware.
