Because the "trial" status depends on the Crossfire Client (runtime or
however one might want to call it). Any AF created app registers itself
with the CF client (this is the stuff that they got patented) and when
this occurs, the CF client will probably check if it's
registered/activated or not.
Since quite some developers are currently looking for a "cracked"
version of the CF client, but are unable to find one, I assume that
"cracking" (i.e. removing the registration check) is not as trivial as
it might look. Just a guess, because I (resp. my customers) never had a
problem with the licenses they had to buy and therefore I never needed
to look for a "workaround". Currently the situation is different and
even though current AF developers are looking for alternatives, there
are actual needs for keeping existing customers happy and rewriting a
complex app (esp. if you DO need cross-platform apps) isn't a task done
in a few hours.

the apps are used on dedicated devices which are meant solely for
running a defined group of applications.
