If I understand your question correctly, the answer is simply that if the
sort order was ASCII then A-Z would come before a-z. Therefore, "Banana"
would come before "apple". I'm no sure why "-" should be sorted above
"space", maybe because it's treated as a hyphen?
Then again, I might have got the wrong end of the stick because my head is
very fuzzy this morning.
