I've written the following function in my code to check this:
Boolean IsColorDevice()

if (GetRomVersion() >= 0x03500000)
{
UInt32 depth;
WinScreenMode(winScreenModeGetSupportedDepths,NULL,NULL,&depth,NULL);
if (depth >= 0x8a)
return true;
}
return false;
