Shouldn't.  But that is really a preference.  For a mc quiz, either
would be ok depending upon the look you want.  In some ways
checkboxes would be better, as it would appear to mimic a paper
form.

It may be better to use non-editable text fields rather than labels.
Easier to manage the contents.
