It is possible to have both versions installed with little trouble.
This wasn't the case with version 6, where you needed to run a script to
reregister COM plugins when switching toolsets, but both 7 and 8 are
using IDE versions that don't conflict with each other.

Not directly from Metrowerks, but CW Palm 7 still seems to be available
in the retail channel.  A search at shopper.cnet.com lists three stores
with copies in stock, starting at $304, and I saw two copies at Fry's
Electronics (the new store in Austin!) last night.

When you get them, check immediately with Metrowerks sales about
upgrades if you think you'll be getting CW Palm 8 down the road.
