It appears that almost all the example code that comes with the PalmOS SDK (including the source code for the built-in applications), and almost all of the source code available on various PalmOS Open Source application web sites is in plain C. The most used library, MathLib, is also in plain C.
I would not be surprised to eventually see Java be used more often than C++ for developing OO PalmOS applications. (There exist some fairly efficient JVM's for the ARM9 CPU, maybe more efficient than PACE.) IMHO. YMMV.
