Well, for starters there's the Palm OS Companion and the Palm OS Reference, available for free on PalmSource's website. In general, lots of good stuff is there: http://www.palmos.com/dev/support/docs/ There are also several books available; check out the comments in the archives of this mailing list (on yahoo or escribe) or on sites like Amazon. A list (that may not be complete) is here: http://www.palmos.com/dev/support/docs/other.html Since the mainstream devices do not have barcode scanners, you'll also have to look into getting information about the SDK of your device vendor.
