Given that it's generally very easy with a PDA to ensure that no one else is looking at your screen, and given that stylus entry methods like graffiti have a relatively high error rate, do you really need to hide the entered password during entry? Look at how the built-in "Security" feature of PalmOS works. If you really want to go with the asterisk approach, check the archives (e.g., using search criteria "asterisk"); this has come up before.
