I've never really seen much point to using a Release ROM, as it lets things slide by that can cause errors to occur on the actual device. I always develop against Debug ROMs if possible. Personally, I prefer to use the Tapwave Zodiac simulator, as it seems to catch things that others miss. I have no idea why -- that's just been my observation.
