I know it can be done.
I just saw something on a TV show that has a Tungsten E displaying RT engine parameters. I wrote the company asking for more info, if they would let me have it.
One company that already does this is DataStick (http://www.datastick.com/). They use their own custom hardware that sits between the Palm OS device and the engine to do data acquisition.
By the way, UI is short for "user interface".
