Default Apps Preferences

How are the Default Apps preferences stored?  Is there a way that I can set them programmatically?

The reason I ask is as follows: on some devices, the SMS client is set as the default mail app, even though they have e-mail set up in another program.  I'd like to check if this is the case and give them an option to change the default mail app right there, but I haven't had any luck searching through the documentation to see how to set the default app preferences.
