I was able to compile it fine on Linux, so am I possibly missing a
library or is something else wrong?
IIRC those are defined in stdlib.h or stdio.h. Just grep for SEEK_SET
and add the appropriate include to gmime-stream.h.
Adding #include <stdio.h> to the top of gmime-stream.h should do it.
