Regardless of what sort of knife you use, keep it sharp (a dull blade
is more likely to injure you than a sharp one) and use something
*under* the parts sheet to cut on. If you don't have or can't easily
obtain a self-healing cutting mat (highly recommended!) you can use
any sort of heavy/thick cardboard, such as the backs from legal pads,
or cereal boxes.

A lot of builders do use the snap-off hobby or utility knives, but a
good handle and #11 blades will give you better control of your
cutting. If you get the smooth, round sort of handle, fit it with one
of those triangular pencil cushion grips to keep it from rolling off
the edge of the table and embedding itself in your foot. A "flag" of
heavy tape will also serve this purpose.
