I tend to want to build everything I see, although aircraft and ships are low on my list. I travel constantly on business so I do not have much time for building. I can cut things out but they are too fragile to actually build in the hotel.
My favorites are automata, and I am especially attracted to things that are detailed and complex. On the other hand I really like the instant gratification of the simple cube toy models. The first thing I built was a geometric ball that I picked up at a store in Danville, CA a lot longer ago than I care to remember, and the MC Escher Kaleidocycles.
