You can animate a clip or slice plane by adding an animation track for the slice offset value. First, add the slice filter. Second, go to the animation view (View -> Animation View) and add a track for the "Slice Offset Values" for the slice filter. Your animation is now set up.
If that does not make much sense, then perhaps you are not familiar with animation facilities in ParaView.
