Stefan, When building paraview, you need to add OSMesa support. It's described in the wiki here: http://www.paraview.org/Wiki/Setting_up_a_ParaView_Server#OSMesa_support
Then you can either run the server in off-screen-mode or set the flag via python (i.e. view.UseOffscreenRenderingForScreenshots = 1). Good luck, Peter.
