In the color editor, after having chosen the grayscale, double click on the two sphere at the end of the color bar to change the colors at the two end points to invert the scale to go from while to black. Then either save this as a new preset for re-use later or click "Make Defauilt" so that this LUT will be used by default the next time a new array is chosen for scalar coloring.
