Hey Paul,

I was able to get the original ParaView docs to show up by adding this line to 
the build_paraview_client() macro section in CMakeLists.txt between 
GUI_CONFIGURATION_XMLS and SOURCES:

  COMPRESSED_HELP_FILE "${ParaView_BINARY_DIR}/Documentation/paraview.qch"

I just copied this from the {PV_src}/Applications/ParaView/CMakeLists.txt
