What version of ParaView are you using? Are you running in parallel i.e. connected to remote server or not? What's your visualization? Just a volume data and then showing it as a "Slice" representation or are you applying the slice filter?
There's no way to change the clip planes explicitly, but ParaView should be updating it correctly. Since it's not, it's a bug.
