I think I have seen stuff like this in the past. I am assuming you are on ParaView 5.5.X. First thing to try is to reset ParaView to default settings. Try Edit/ Reset to Default Settings/ Yes, and Backup Current Settings. Then, restart ParaView, and try again. Does that help? If not, maybe try updating your graphics drivers?
