Greek Pasta Salad: Greek dressing (see recipe) 2 tablespoons pine nuts 1 teaspoon olive oil 1 pound bow tie pasta, cooked according to package instructions, rinsed and drained 1½ cups cherry or grape tomatoes, halved ½ cup sliced black olives or coarsely chopped pitted kalamata olives 3 to 4 green onions, thinly sliced ½ cup crumbled feta cheese Greek dressing: ½ cup olive oil ¼ cup red wine vinegar ¾ teaspoon salt ¼ teaspoon freshly ground black pepper, or to taste 1 clove minced garlic ¾ teaspoon dried oregano or 2¼ teaspoons finely chopped fresh ¾ teaspoon sugar Preparation: Greek Pasta Salad: Prepare Greek dressing and set aside. Heat olive oil in small, non-stick pan over low heat. Add pine nuts and brown carefully. Drain on paper towel and set aside to cool. Combine pasta, tomatoes, olives, onions and cheese in large bowl. Add Greek dressing to taste. Stir in pine nuts to taste and serve. Greek dressing: In small bowl, whisk all ingredients together.
