Kathy,

Before you start to record a new file you have to press 
control plus n to open a new file.  After pressing control 
plus n you are given choices for the sampling rate you want 
to record at, whether you want to record in stereo or mono 
and other options.  When you have selected how you want to 
record tab to the OK button and press enter.  You can then 
begin recording with control plus F9 and stop recording with 
control plus f8.

Hope this gives you more of an idea on how to use Gold Wave.
