Hi Stephen.

In very crude terms, disc at once means that the whole disc is burned
without the laser pausing or switching off temporarily whereas track at once
means that  a track is burned, the laser is temporarily paused and then
resumes again to burn the next track.

Disc at once is the default and yields best results for audio compilations,
copying CD's  and the like.  Track at once is more often used when burning
data CD's or if you are burning an audio  compilation from a bunch of source
CD's rather than files on your hard drive.
