This is supposed to be an accessible application which will do what
you want, though I haven't used it myself yet. Bindcooltech.com has a review
of what looks like this application.

Subject: query about converting dvd audio to Mp3

Houdy yall,

I'm getting a DVD of a concert next week and I want to convert the audio of
it to MP3 format. What programs would you recommend for this and how do you
go about doing it. It's going to be my first.
