I'm a bit confused by your question. Have you brought up CDEX and looked through the settings? Do you have questions about specific settings?
I'm worried I'll be talking down to you, but I'd start by going into the Settings for CDEX. You can get there with F4 or using the menu bar Options -> Settings. In the Encoder tab, which is the tab I start out in when I bring up the settings, you'll find all of the settings you're talking about. I'd suggest using the LAME MP3 encoder and one of the presets, such as insane. Good luck!
