Don't really know of any key strokes for configuring CDex. All you need
to do is choose the CD reader and also choose the type of conversion you
want to do. All this can be found in the settings tabs and they can be
activated by the F4 key but also from the pull down menu bar. Once you
have settings open you'll be able to navigate around and set for the bit
rate and sample rate of your mp3 files and so on as well as many other
things which I don't even understand after using it for over 10 years so
don't worry about them. If you don't understand what a setting does
just leave it at default until you learn how to use it later on. Just
hit the F1 key and read through the help files a bit and it will become
very easy to use.

CDex will do this and several other formats and is FREE to boot! So
will Goldwave and many others but the free one is probably what you want
and is very accessible and easy to use. CDex also ripps CDs and you can
save the tracks in several different file formats.
