The third icon in the status bar shows network connection status. If you are connected to a Wi-Fi network, it will read "x of 3 bars, Wi-Fi signal strength." If not, it will show what type of connection you have to the cellular data network (3G, GPRS, Edge).

By default, the iPhone is configured to connect to preferred networks (those which you have connected to before) automatically when they are within range.
