open the monitors control panel, if you select 256 colors the "grays"
option becomes available, just check it and go back to color when your
done, although it's grayed out at higher bit depths.  at least that
works with the geforce 2mx that shipped in my g4 machine, it should work
on most vid cards, and some may let you have more grays, if you actually
want them for some reason.
