I don't really know on the Mac side, but I run Geiss (a really 
awesome VIS package for Winamp) on a Pentium III 533 with a fairly 
kickin' video card, and the only way I can stay above 30fps is to 
leave it at 640x480 32bit or lower.

That's on a PC, so I guess YMMV on a Mac.

It also depends on what kind of graphics you are working with. A 
simple fullscreen oscilloscope or bar-graph effect shouldn't be too 
processor intensive, as opposed to full screen true color effects 
with alpha blends, blur effects, etc.
