Use S-Video if your VCR supports it, and the usual RCA for audio.

Your Mac can easily display full screen, but won't record that size. 
The software may switch your monitor to 640x480 while in full screen.

There're some shareware apps that'll display full screen. BTV Viewz 
is pretty good.

Anything that imports video should be able to do this.
