Your 7500 should run OS9.1 perfectly fine...

I've been running a Mac server for over a year now, on an old 4400 with 
only 32 Mb of RAM and OS 9.1 with no problems. It's a myth that OS9.1 
takes more RAM than 8.6 --it will only take more if you have more. :) On 
this machine OS9.1 takes only 15mb of the avail 32mb.

Of course I could not use this machine as a normal production machine, 
but as a server it runs 4 diff apps and and runs smooth with no hiccups. 
God forbid, it crashes less often than my MacOS X box (heresy!).
