Well, OS X is a beautiful looking OS. If you have the right processor for
it (G4 -- OS X is built to effectively use Altivec -- though a G3/300 also
works fine), OS X will work seamlessly. It has true multi-tasking so that
if you crash a program you still have access to the Finder and the rest of
the other programs you may have running at the same time so that you DON'T
need to restart the whole system (the only time you may need to do so is
during a kernal panic). It's biggest Pro is that, well, it's UNIX! Make
sure you have USB and Firewire in order to utilize printers and digital
media (burners, cameras, etc.).

On the downside, I've noticed that OS X likes it's memory. Get as much
memory as you can, the more the better. Since OS X is still in it's
infancy, there are not that much commercial programs out there (though the
list of available programs is growing!). However, in Classic mode you can
run most of your current OS 9.1 programs. Make sure you check your hard
drive for any faults -- use Disk Doctor or any other such program to check
the quality of your drive. I never noticed that my drive had a partition
problem on it and I kept getting kernal panics every so often. After
running Disk Doctor, it fixed it and now my OS X has been running solid
(after a clean re-install). Check to see if there are any issues regarding
running OS X on a 8500 with a G4 card. Apple does mention something about
installing OS X on machines with G4 cards. Also OS X is very finicky about
SCSI and attached SCSI peripherals. IF you have a scsi hard drive you WILL
NOT be able to boot OS X from that drive (according to Apple).
