I recommend looking at CMTools - if you are on 9 or before.
Using a set of folders in the contextual menus items folder that offer
various actions, one of which is "set creator to". You put an alias of or an
example of the doc(s) you want to be able to change to and then that option
appears in a submenu when control clicking.
So I could have a folder full of mp3 files  - select all and control click
and choose 'set creator to' > iTunes and they all are changed in one go.
It is Freeware I believe and is invaluable in my Mac usage.

In fact there are so many wonderful little ways of making the Mac OS work to
your preference that I expect Mac OSX would feel like a big step backwards -
until the shareware community get appropriate modification out - (Oh maybe
they have but I cant run it anyway yet).

Actions that CMTools offers via control click (or Finderpop click) are:

Application menu
Compress
Copy to
Decompress
Launcher
Lock
Make Alias in
Move to
Open Using
Refresh menus
Set Creator & Type to
Set Creator to
Set Type to
Unlock

Any of the above can be simply turned off and you only use the ones that are
useful.
