If you use Eudora 5.1 you have to select reply from the Message menu. 
Then use the mouse to select (highlight) the bits you do NOT want and 
delete, or if the cursor is st the end of the bits to delete, just 
start typing and the highlighted bits will disappear.

Easy! Just experiment. It can't hurt.
