MkLinux will work.  I used it on a 7100 a few years back.  I don't
know what window managers are included; you may want to stick with one
of the older ones (like fvwm) for speed.  GNOME and KDE are both
pretty resource intensive.

BTW, the 7100 is actually a nubus (not pci) powermac, so you might get
more information from the 1st-powermacs list.
