In OS 9.1, you access the Appearance Control Panel, and then select the 'Desktop' tab. I believe that the CP was introduced with OS 8.5, so it should be the same for you. Also, definately download and install the OS 8.5.1 update, as that is a much more stable version of OS 8.5.
