I think it must just be Apple being super cautious, just in case we overload
the power supply with too many video cards (they tend to use a fair bit of
power) and damage some other part of the system.

I'd agree with you except finding a big enough desk isn't easy. I once did
some contract work at a place that set me up with a bitchin' Mac system with
two 21" monitors at 1800x1300... when doing Flash development you can NEVER
have too much screen space.

When 17" TFT screens come down to AU$400 each then I'll just bolt a heap to
the wall, problem solved.
