If you can find one get an Apple-branded Fast Ethernet card. These were 
an upgrade option in beige G3s (just before 100BaseT Ethernet became 
standard in PowerMacs). Being Apple's own they don't need (or seem to 
need) drivers; just plug in and you'll see something like "PCI Slot A1 
Ethernet" come up in your TCP-IP/AppleTalk/Networking preferences. 
Select it and off you go.

Otherwise, everyone mentions that cards based on the RealTek chipset 
have readily available drivers.
