 For some time now, I've been seeing some emails with little Apple
 icon bullets instead of the usual round-dot bullets. How are these
 made, meaning with what application/font/emailer/whatever can I make
 Apple icon bullets? I'm using a 7300 upgraded to G3/400 with 368MB
 RAM, OS 8.6, Eudora Pro 5.1 (paid version).


It will depend on the typeface you are using, but atart with "Key Caps" which comes with your OS.
Hold down the shift, option, control and command keys one at a time and together (pairs, triples, etc.) to locate the appropriate symbol:
