My 8600 ASP shows a 604ev 300 Mhz processor. Is that the same as the Mach

Yes, 250 MHz and faster 8600s and 9600s are always Mach 5 mobos and
processors.

When I upgrade, do I need the Mach V or will a G3/4 daughter card work?

Most G3 and G4 cards are capable of being set for either conventional or Mach
5, using dip switches or other documented means.
