My remarks below are based on experience with Eudora 5.0 and 5.1, but I doubt they're 
different.

AFAIK, using any of them will generate HTML code for the whole message. So will styles 
in quoted text. You should select 'Styled Text' in the Settings dialog box and choose 
the appropriate options. I check 'Styled Text Only' and 'Ask Each Time' so that I can 
send styled text only when I think it's appropriate.

To convert a message to plain text, select the whole message and press 
command-option-T. This will work except when there are embedded URLs! In the latter 
case, you need to select the whole message, or at least the part containing the URLs, 
and choose 'Edit->Text->Link to URL'. When the dialog box appears, click on 'Remove 
Link'.

AFAIK, 'Quoted Printable' is a method of transmitting non-ASCII characters, and some 
other special characters, as ASCII text. Each such character is represented by an 
equal sign followed by two hex digits representing the 8-bit code for that character. 
It has nothing to do with HTML and shouldn't pose a problem for mailing lists. (It 
hasn't for me, at any rate, and I have it enabled all the time!)
