Depends on the system its in and the use. In a PCI Power Mac I would vote for the lower MHz because I believe there is enough system latency on the system bus [typically 45MHz or so] that keeping a G3 feed data fast enough is the biggest issue.
Bus speed in either case would be 50MHz (determined by the processor card).
I would concur that the 300MHz would be faster. My 7500 with a 300MHz PowerLogix w/1Mb cache definitely seems faster than an 8500 with 400MHz Sonnet w/ 512K cache. I have done any other comparisons than simply using it and mentally comparing performance.
